Muffin Assortment

Ok the (optional) theme is yellow! and when asked if I should make a new page layout for this or use the usual page layout, my sibling said I should use the usual layout but make it yellow. So here we are! I even changed my logo and icon!

Anyway! I stumbled upon the Small Web Potluck and since I collect recipes and love participating in fun things, I decided to give it a shot. I'm not much of a chef or a baker myself, but my mom is so good in the kitchen, so she helped tell me what to do (and she provided the recipes)!

I also got these cool badges for being on the sign up sheet and using yellow in my submission!

ONTO THE MUFFINS!!

I decided to make some muffins for this potluck, but I couldn't decide what kind, so we're going with a muffin assortment. All three recipes are provided, click the links below to zip right over to the specific recipe!

The Lemon Poppyseed and Chocolate Chip muffins came out a little dry, in the future we may add some sour cream to the recipes to make them a bit more moist! Adding some butter to the top and heating them up/eating them warm helps with the dryness.

Blueberry | Chocolate Chip | Lemon Poppyseed

Blueberry Muffins

Recipe makes 24 muffins

Ingredients


Directions

  1. Preheat oven to 400°F
  2. Line 2 muffin pans with liners (or grease the pan)
  3. In a bowl, combine dry ingredients (white sugar, brown sugar, flour, salt, baking soda)
  4. In another bowl, combine the wet ingredients (eggs, vanilla, sour cream, blueberries)
  5. Add dry ingredients to the wet ingredients
  6. Mix just to moist - do not over mix! The mixture should have lumps
  7. Spoon into muffin pan, 2/3 full
  8. Bake for 20 minutes
  9. Muffins should be somewhat moist (moreso than the other recipes here)

Chocolate Chip Muffins

Recipe makes 12 muffins. This recipe is very very similar to the Lemon Poppyseed recipe!

  1. Preheat Oven to 400°F
  2. Line a muffin pan with liners (or grease the pan)
  3. In a bowl, combine dry ingredients (flour, sugar, baking powder, salt, chocolate chips) and make a well in the center
  4. In another bowl, combine wet ingredients (egg, milk, oil)
  5. Add wet ingredients into the dry ingredient's well
  6. Mix just to moist - do not over mix! The mixture should have lumps
  7. Spoon into muffin pan, 2/3 full
  8. bake for 18-20 minutes, until golden brown
  9. Insert a toothpick to check if it is done. If the toothpick is clean, the muffins are done!

Lemon Poppyseed Muffins

Recipe makes 12 muffins. This recipe is very very similar to the Chocolate Chip recipe!

  4. In another bowl, combine wet ingredients (egg, milk, oil)
  5. Add wet ingredients into the dry ingredient's well
  6. Mix just to moist - do not over mix! The mixture should have lumps
  7. Spoon into muffin pan, 2/3 full
  8. bake for 18-20 minutes, until golden brown
